Simple staple: lentil and rice combo in a pan (Vegan/vegetarian)


I make this dish several times a week! I switch out the vegetables, but this rice-lentil-ginger combination is always a sure winner. 


3-4 tbsp (COOKED) brown or white rice

3 tbsp brown lentils 

0,5 cm. slice ginger (finely chopped)

3-4 medium mushrooms 

1 tbsp soy sauce 

A bit of plant based butter (Or normal butter if thats your preference) 


Add sliced mushrooms and your preferred butter to a pan. 

When the mushrooms begin to soften, add the lentils and rice. 

Pour about 1 tbsp soy sauce on the pan and mix well. 

Lastly, add the finely chopped ginger and wait a few minutes to let it all simmer together. 

Enjoy with your favourite mixture of vegetables! (Or whatever you have in the house that needs to be eaten).
